Bacon and Blue Meatballs

½ pound ground beef
½ pound ground pork
2 slices fresh bread crumbs
1/3 cup milk
½ cup minced onions
1 tablespoon butter
1 egg, lightly beaten
1 teaspoon salt
1 teaspoon pepper
½ teaspoon nutmeg or allspice
½ teaspoon paprika
2 to 3 tablespoons olive oil
2 tablespoons flour
Salt and pepper to taste
½ cup dark beer
1 cup beef broth
½ pound blue cheese
½ pound bacon, cooked and drained
½ cup sliced green onions
Mashed Potatoes or Pasta

Mix ground meats together with bread crumbs and add milk. Set aside. Sauté onions in butter until soft and mix with meat mixture. Add egg, salt, pepper, nutmeg and paprika and mix well.  I always cook a small test meatball to make sure the texture and spices are right. If they are form the rest of the meatballs. If they need spices add more, if they are too soft add some dry bread or cracker crumbs and if too dry add a little more milk. Form into whatever size meatball you like. Cook them over medium to medium high heat in olive oil. As the batches are done place them on a baking dish in the oven to keep warm. Mix flour into the drippings, if there is less than 2 tablespoons oil add enough butter to make 2 tablespoons. Stir in beer and then add broth. When sauce is thickened add blue cheese. Place potatoes or noodles on a platter and place meatballs on top. Pour blue cheese sauce on top and crumble bacon and green onions over all.
