Pork, Blue Cheese & Spinach Casserole

1 1/2 teaspoons paprika
1 teaspoon onion powder
1/2 teaspoon black pepper
1 teaspoon salt
1 pound boneless pork, ribs or chops
2 tablespoons olive oil
1/4 cup white wine
1 package fresh spinach
1 teaspoon caraway seeds
1 teaspoon salt
1/2 cup sauerkraut
4 red potatoes cut into chunks
3 cloves minced garlic
 ¾ cup sour cream or plain yogurt
1 cup crumbled blue cheese

Combine paprika, onion powder, pepper and salt. Rub mixture on both sides of the pork. Place pork in cast iron skillet and brown about 10 minutes per side. Remove pork and add garlic, spinach and white wine. Cook until spinach is wilted, about 10 more minutes. Add back pork, potatoes, caraway, salt and sauerkraut and place pan in oven and bake for about 20 minutes at 350. When potatoes are tender remove pan from oven and stir in sour cream and blue cheese and broil for about 5 to 10 minutes, until bubbly and hot.
