1 bottom pie crust
2 tablespoons butter
8 ounce package spinach, fresh or frozen, thawed and drained
1/2 cup red onions, minced
2 cloves minced garlic
4 ounces blue cheese, crumbled
4 ounces Swiss cheese, grated
½ pound cooked bacon
3 eggs
1 1/2 cups cream
1/2 teaspoon salt
¼ teaspoon nutmeg
1/4 teaspoon paprika
1/4 teaspoon pepper
2 ounces Parmesan cheese, grated
1/4 cup green onions w/tops,
sliced
Make the crust and set aside. Chop
up the red onions and garlic and sauté them in butter for a couple of minutes and
add the spinach and cook until the moisture comes out. Drain and place them in
a mixing bowl and add the blue and Swiss cheese, cream, and spices. Whisk the
eggs and add to the vegetables and cream. Stir in half of the bacon and pour this mixture into the crust. Sprinkle
the remaining bacon, Parmesan and green onions on top. Bake in a 350 degree oven for 30 to 45
minutes, or until the filling is golden brown and puffy.
