When I
was working I was especially fond of recipes like this one. Come home from work
and after first changing into sweats and a tee shirt open package of boneless
and skinless chicken (white or dark or both) and place in a casserole dish with
the rest of the quickly prepared ingredients you can sit and relax on the couch
while this one dish meal cooks in less than a half an hour. Much better than
any frozen food and just as quick as ordering a pizza!

chicken, boneless and skinless
4 red
potatoes, cut into chunks
1/2 cup
chopped onions
1 1/2
cups green beans
1 jar artichoke
hearts, chopped up with liquid
1 cup
white wine
1
tablespoon salt
1
tablespoon paprika
1
teaspoon pepper
Place all
ingredients in a casserole dish, cover and bake for about 15 minutes, remove
foil and continue baking about 10 minutes longer or until chicken is tender and
slightly browned.
