Garlic Chicken Salad Sandwiches

3/4 cup olive oil mayonnaise
1 tablespoon Dijon-style mustard
1 tablespoon lemon juice
2 cloves minced garlic
2 cups cooked chicken breast, cut into chunks
1/2 cup celery, finely diced
1 red bell pepper, seeded and cut into thin strips
1/2 cup shredded carrots
1/4 cup minced green onions
4 lettuce leaves
4 French bread rolls

1. Combine mayonnaise with mustard, lemon juice and garlic, chicken, celery, pepper, carrots and onion. Mix together and spread 1/4 of the chicken salad  on a  roll and top with a lettuce leaf. Add more mayonnaise if you like.
