Layered Meatloaf Casserole

1 pound ground turkey
¼ cup minced onions
1 tablespoon parsley or cilantro, minced
2 jalapenos, minced
1 teaspoon salt
½ teaspoon pepper
½ teaspoon cumin
½ teaspoon curry powder
½ cup soft bread crumbs
1 egg
¼ cup tomato juice
1 cups grated hard cheese, Parmesan, Romano or?
4 small potatoes, sliced
4 carrots, sliced
4 tomatoes, peeled and seeded and diced
1 teaspoon Italian seasoning
½ teaspoon hot paprika
½ teaspoon each salt and pepper


Mix together: turkey, onions, parsley, jalapenos (or other fresh chilies), salt, pepper, cumin, curry, bread crumbs, egg, tomato juice and ½ cup cheese. Form into a loaf. In a baking dish place a layer of sliced potatoes on the bottom, then a layer of sliced carrots, then place the meatloaf on top of the potatoes and carrots. Mix the diced tomatoes with the Italian seasoning, paprika, salt, pepper and ½ cup of cheese. Spread this over the top of the meatloaf and vegetables. Bake at 350 for about 45 minutes. Slice meatloaf and serve on top of the vegetables.
