Skewer Party

A friend and I got together recently and each marinated a couple of pieces of meat each and skewered and barbecued them along with some vegetables and I made several dipping sauces to go with them. It was a wonderful taste bud assault.

Potatoes – Quartered and brushed with olive oil and sprinkled with salt (1 small potato each)
Mushrooms, Bell Peppers & Onions – enough for a vegetable skewer for each person- also brush with olive oil and sprinkle with seasoned salt.
Shrimp, 1/3 pound (marinated in olive oil, thyme, garlic, lemon juice)
Beef, 6 ounce steak (marinated in lime juice, cumin, liquid smoke, garlic)
Pork, 6 ounce boneless sparerib (marinated in soy sauce, ginger, mustard, hoisin sauce)
Chicken, 1 whole breast (marinated in curry, hot paprika, garam masala, white wine)

Cut the meat into pieces for the skewers and marinate the meats overnight in the refrigerator. Make skewers with some of each meat on them except the shrimp, it will cook faster so they should be on their own.

Serve with dipping sauces of your choice, here are some simple and quick sauces:

Chinese Peanut Sauce: Peanut Butter – Dry Mustard – Soy Sauce – Ginger – Orange Juice
Anchovy Sauce: Olive oil – minced anchovies – garlic – lemon juice - cayenne
Chili Horsey Sauce: Red Chili Garlic Paste – Sweet Soy Sauce – Fish Sauce – Horseradish
Black Sesame Sauce: Black Bean Garlic Paste - Sesame Oil – Soy Sauce
Sweet & Sour Hot Sauce: Hoisin Sauce – Hot Oil – Rice Wine Vinegar – Honey – Hot Sauce
