Parmesan Baked Chicken Casserole

1 pound skinless and boneless chicken pieces
3 tablespoons melted butter
1 tablespoon minced parsley
2 tablespoons grated Parmesan cheese
2 teaspoons garlic salt
4 red potatoes cut into chunks
1 sweet onion, cut in wedges
3 carrots, cut in pieces
½ pound green beans
2 tablespoons olive oil
1 tablespoon Italian seasoning


Melt butter and put in a bowl. Mix dry bread crumbs with parsley, parmesan and garlic salt. Dip chicken pieces into melted butter, then roll in bread crumb mixture and place chicken pieces in a baking dish and arrange potatoes, onion, carrots and green beans around the chicken and drizzle olive oil over them and sprinkle Italian Seasoning over them as well as any leftover bread crumbs and Parmesan cheese if there is any, or make some more if you like.  Bake at 350 for about 45 minutes, or until chicken and vegetables are cooked and slightly browned.
