Blackberry Dumplings

A wonderful quick summer berry dessert!

1 quart  Blackberries (any type)
1/2 cup sugar
1/4 cup water
1 tablespoon lemon juice
1/4 teaspoon salt
1 cup flour
1 tablespoon sugar
1/4 teaspoon salt
1 1/2 teaspoon baking powder
1 1/2 tablespoon butter
1/2 cup milk

1. For the Berry Sauce: Wash and clean berries and put them in a 3-quart saucepan with a tight-fitting lid. Add the sugar, water, salt and lemon juice to the berries. Cover and simmer about 3 minutes. Prepare the sauce and bring to a simmer after you make the dumpling batter.

2. For the Dumplings: Sift flour, sugar, salt and baking powder together. Cut butter in with a pastry blender or a fork (it can be pretty coarsely blended and still make fine dumplings) until about the size of rice. Add the milk and stir vigorously for a minute or two.

3. Drop the dumpling batter by the teaspoon full onto the pot of simmering berries, dipping spoon each time into hot sauce before dipping it back into the batter. After all of the dumplings are in the sauce, cover the pan, and cook over low heat for 20 minutes. Do not uncover before the 20 minutes is up.

4. Spoon dumplings into individual dishes and pour berries and sauce over the top.
