I named this recipe what I did because I created it after I couldn't find one carrot cake recipe that had everything I wanted in it so I made one. The frosting is also quite decadent and the addition of orange extract is what most of my friends say puts it over the top. There is also a healthy amount of carrots in this cake! It is easy and foolproof and really good!
2 cups flour
1 cup sugar
1 cup brown sugar
2 teaspoons baking soda
2 teaspoons baking powder
1 teaspoon salt
2 teaspoons cinnamon
1 can crushed pineapple, drained
1/2 cup raisins
4 eggs
1/2 cup cooking oil
2 teaspoons vanilla
1/2 cup pecans
4 cups grated raw carrots
8 tablespoons softened butter
2 8-ounce packages cream cheese, softened
1 pound powdered sugar
2 teaspoons vanilla
1 teaspoon orange extract
1 teaspoon lemon extract
1. Stir together flour, sugar, baking soda & powder, salt and cinnamon. In a large mixing bowl beat eggs until frothy and slowly beat in oil. Gradually add flour mixture and beat together until smooth. Stir in the rest of the ingredients up to and including the carrots. Pour into a large greased and floured cake pan and bake in a 350 degree oven about 30 to 45 minutes, until a toothpick inserted in the middle comes out clean. Cool and then frost.
2. Frosting: In a small mixing bowl blend butter and cream cheese. Gradually add 1 pound powdered sugar and beat until smooth and creamy. Stir in vanilla, orange and lemon extract.
Oven Temperature: 350°F
Cooking Time: 30 minutes
