Make roasted red pepper dip before making the seafood patties, it can be made a couple hours ahead to let the flavors blend. I recommend using the olive oil mayonnaise for this recipe, it has a lovely flavor and a smooth and creamy texture.
1 egg
1/2 pound crab meat
1/2 pound cooked shrimp, coarsely chopped
2 minced green onions
cup Italian seasoned dry bread crumbs
1/2 cup olive oil mayonnaise
1 teaspoon Worcestershire sauce
1/4 teaspoon Tabasco, regular, jalapeno or smoky chipotle
1/2 teaspoon salt
2 tablespoons flour
1 1/2 tablespoons butter
1 1/2 tablespoons olive oil
1 jar roasted red peppers
2 cloves minced garlic
1/2 teaspoon salt
1/2 cup olive oil mayonnaise
1. In a bowl beat egg with fork and add crab, shrimp, onions, bread crumbs, mayonnaise, Worcestershire, Tabasco and salt. Mix together gently and form into 6 patties. Dip each side of the patties in flour. Heat oil and butter over medium heat and add seafood patties and fry about 5 to 10 minutes on each side until lightly browned.
2. Red Pepper Aioli: Remove roasted peppers from the jar and drain off liquid. Place the peppers ion a blender and add minced garlic, vinegar, salt and mayonnaise and blend well.
3. Serve crab and shrimp patties with the red pepper sauce on the side.
