½ pound chicken breast, boneless pork chops or veal cutlets
1 tablespoon olive oil
½ teaspoon salt
¼ teaspoon thyme
¼ teaspoon paprika
¼ teaspoon pepper
2 tablespoons flour
½ cup diced tomatoes
¼ cup onions
1 clove minced garlic
1 teaspoon oregano
¼ teaspoon salt
¼ teaspoon pepper
¼ cup parmesan
2 slices Mozzarella
Sprinkle salt, thyme, paprika and pepper on the meat and
then dust with flour. Sauté the meat in the olive oil for about 5 minutes on
each side, remove from pan and set aside. Add the tomatoes, onions and garlic
to the pan and season with oregano and salt and pepper, cook until the sauce
bubbles. Place the meat on a broiler safe dish and pour the sauce over and then sprinkle
the grated Parmesan on top and place the slices of Mozzarella. Broil until the
cheese is melted, about 5 minutes or less. Double the recipe for two!
