Garlic Swiss Steak

2 1/2 pounds boneless round steak
3 teaspoons salt
1 1/2 teaspoon pepper
1/2 cup flour
1/4 cup olive oil
2 tablespoons butter
6 cloves minced garlic
12 ounces beer
1 tablespoon dry mustard
2 tablespoons vinegar
1/2 cup plain yogurt


Pound steak thoroughly and season steak with salt and pepper and coat with flour. Heat oil and butter in a large pan and brown the steak quickly on both sides. Add the garlic and sauté for a few minutes and then cover the meat with the beer, mustard and vinegar. Cover the pan and simmer the meat until tender, about 45 minutes to an hour. After the meat is tender stir in yogurt. Serve with potatoes or pasta to absorb the rich garlic gravy.
