A very tasty “what’s for dinner tonight” pasta
dish and is a well balanced meal!
½ pound chicken meat, cut up, cooked or
raw
1 teaspoon oregano
1 teaspoon salt
½ teaspoon pepper
1 tablespoon olive oil
1 tablespoon butter
2 cloves minced garlic
1 green chili, minced
½ pound asparagus, in 1 inch pieces
½ cup diced red peppers
2 tablespoons lemon juice
1 jar marinated artichoke hearts, chopped
1 cup cherry tomatoes
Salt and pepper to taste
½ cup grated Parmesan cheese
1 package fresh cooked pasta of your
choice
In a skillet heat up olive oil and butter
and if you use raw chicken add it now, if you use cooked chicken add it with
the artichoke hearts, add garlic, green chili, asparagus, red peppers, oregano,
salt, pepper and lemon juice and sauté until the vegetables are crisp tender
(and chicken is cooked). Stir in chopped artichokes along with some of the
liquid they are packed in (and cooked chicken if that is what you are using).
Pour the vegetables, chicken and liquid over fresh cooked pasta and toss with
the cherry tomatoes and Parmesan cheese.
