Latin Spired Stew

½ pound beef, cubed
½ pound pork, cubed
½ pound chicken pieces
1 tablespoon olive oil
1 onion, diced
2 cloves garlic, minced
1 green pepper, diced
2 green chilies, minced
2 carrots, sliced
2 sweet potatoes or yams, chopped
3 tomatoes, chopped
1 jar roasted red peppers, chopped
1 small jar green olives, halved
1 tablespoon minced cilantro
1 teaspoon salt
1 teaspoon thyme
1 teaspoon ginger
¼ teaspoon cinnamon
¼ teaspoon nutmeg
1 tablespoon brown sugar
1 tablespoon lime juice
1 cup coconut milk
½ cups rice


In a soup pot brown the beef, pork and chicken in olive oil for about 15 minutes. Add the onion, garlic, green pepper, chilies, carrots and sweet potatoes and cook 5 to 10 minutes. Add all of the rest of the ingredients and cook until rice is tender.
