One of my all time favorite go-to side dish, easy and delicious!

potatoes, peeled and grated
1 medium
onion, grated
1 egg
3
tablespoons minced parsley
1
teaspoon salt
1/2
teaspoon pepper
2
tablespoons flour
1/2
teaspoon baking powder
¼ cup oil
Rinse the
grated potatoes in a colander, Mix potatoes and onions together and add all the
rest of the ingredients except the oil. Heat the oil in a large frying pan.
Drop about 2 tablespoons of the potato mixture into the hot oil for each
pancake. Flatten with the spatula and fry over moderate heat for about 10
minutes per side until golden brown and crisp.
