Garlic Pork With Ginger Dipping Sauce

Serve this with oriental noodles to drizzle with some of the dipping sauce.

3 tablespoons peanut oil
4 tablespoons garlic minced
1 pound boneless pork, cut 1/2" cubes
2 tablespoons fish sauce
1 teaspoon ground pepper
1 tablespoon cilantro, chopped
1/2 cup fish sauce
2 tablespoons rice wine vinegar
2 teaspoons sugar
1 cup water
2 tablespoons ginger syrup
1/4 cup grated radish
1 clove minced garlic
1 tablespoon fresh lime juice
3 drops chili oil

1. Heat oil in a wok, or a frying pan, and add the peanut oil. Sauté the garlic for a minute and then add the pork. Cook for another 10 minutes and then add the last 3 ingredients. Serve with rice or noodles with sauce to dip the pork in.

2. Mix fish sauce through chili oil together and let stand for 30 minutes before serving.
